Vegan Mango Lassi

A cold and creamy beverage featuring ripe mango, plant milk, non-dairy yogurt, and aromatic spices.

I’ve already posted about the magical mango <- my absolute favorite fruit. I simply love the flavor composition, the texture, the color, the aroma, and more. Mangos remind me of my childhood when I enjoyed an array of foods featuring mango.

Have you ever had a Mango Lassi? Lassi is a yogurt-based beverage served in India; though reportedly, it originated in Pakistan. It’s a blend of yogurt, water or milk, fruit, and a variety of aromatic spices. (Wikipedia)

This Vegan Mango Lassi is a mildly sweet and smooth Indian beverage containing three primary whole food plant-based ingredients – mango, plant milk, and non-dairy yogurt. If desired, it can be lightly sweetened with maple syrup, coconut sugar, or agave syrup. And then a variety of spices, including cinnamon, cardamom, or threads of saffron are used to add variety and nuance.

I enjoy adding a dash of cardamom and cinnamon to my Vegan Mango Lassi before blending it and garnish it with threads of saffron. It makes a striking presentation.

First up are my mangos – they aren’t just delicious, mangos are super healthy and provide wholesome nutrients that help our bodies thrive. They contain dozens of polyphenols, much like antioxidants, that work to protect our cells from free radical damage. One cup of mango also contains two-thirds of the recommended daily amount of Vitamin C.

Second, plant milk is an amazing ingredient. I may not drink it; but I use it in a variety of recipes. You can purchase so many different milk blends today; but you can also make your own by using a combination of wholesome ingredients. And if you haven’t tried my Oat + Nut Milk yet, this is a great recipe to start. It is so simple and great in so many recipes, including this Mango Lassi.

And finally, the reason this Vegan Mango Lassi is considered a lassi at all is due to the yogurt base. Just like milk, you can certainly purchase non-dairy unsweetened plain yogurt. And since I have the hardest time finding it, I’ve resorted to making my own Creamy Non-dairy Yogurt. It’s incredibly smooth, thick, and creamy. And it costs so little to make – less than 20 cents versus about two dollars.

Ingredients

  • 6-8 ounces non-dairy yogurt*
  • 1 mango, chopped (1 cup)
  • ¾ – 1 cup plant milk**
  • 1-2 Tbsp agave, date syrup, or maple syrup
  • dash of cardamom, cinnamon, or both (optional)
  • Saffron threads (optional)

Instructions

  1. Add all of the ingredients except the threads of saffron to a high-speed blender and blend until smooth and pourable.  You may add a little more milk to get it to the desired consistency. 
  2. Adjust seasonings to your taste preference.
  3. Pour into glasses or jars and enjoy!

Notes

* I use one 7 ounce jar of my Creamy non-dairy yogurt.  Most cartons of yogurt are 6-8 ounces.

** Start with ¾ cup milk and add more if you’d like your Vegan Mango Lassi thinner.

You can also use an immersion blender or food processor to blend your Vegan Mango Lassi.

Ingredients
  

  • 6-8 ounces non-dairy yogurt*
  • 1 mango chopped (1 cup)
  • ¾ – 1 cup plant milk**
  • 1-2 Tbsp agave date syrup, or maple syrup
  • dash of cardamom cinnamon, or both (optional)
  • Saffron strands optional

Instructions
 

  • Add all of the ingredients except the saffron threads to a high-speed blender and blend until smooth and pourable. You may need to add a little more milk to get it to the desired consistency.
  • Adjust seasonings to your taste preference.
  • Pour into glasses or jars and enjoy!

* I use 1 jar of my Creamy Non-dairy Yogurt; it’s about 7 ounces. Most cartons of yogurt are 6-8 ounces.
