Velvety smooth chocolate-avocado pudding topped with fresh fruit, granola, and hemp hearts for breakfast – a chocolate lover’s dream!
When I went to Newport, Rhode Island, I found Root, a delightful plant-based eatery on Broadway. During my two week stay, I ate there at least eight times. They have tasty and healthy plant-based food, including a delicious chocolate “pudding” bowl.
Just to satisfy your curiosity, Root topped their chocolate pudding with fresh bananas and strawberries, coconut flakes, and cacao nibs. Here’s a photo of the deliciousness before I devoured it….
The owner kindly shared the key components of the pudding and I attempted to replicate it as soon as I returned home. And now I’m sharing my version of this tasty and healthy breakfast treat with you.
One of the reasons I love this pudding bowl is that I absolutely love chocolate pudding. Creamy indulgent chocolatey goodness. What’s not to love? Well, typically, delicious chocolate pudding is made with eggs, milk, and lots of sugar. Have no fear – this chocolate pudding has none of these.
Instead, and much like my Chocolate Birthday Cake, this pudding combines cacao and avocado to create an indulgent and creamy treat. This is the best plant-based chocolate pudding you could ever crave.
This Chocolate Avocado Pudding Breakfast Bowl is full of cacao powder, bananas, avocado, and just a touch of maple syrup and vanilla; though you probably don’t even need the maple syrup. I like adding in a little almond butter for a little more depth of flavor. But feel free use a spoonful of your favorite nut butter (or soaked nuts). It adds just a smidgen more protein and extra creamy caloric goodness.
You then blend these amazing plant-powered natural ingredients in a high-powered blender or food processor until nice and smooth and voila! The creamiest silkiest chocolate pudding with no hint of avocado or banana. It truly is magic.
Wouldn’t you agree?
For an incredible breakfast bowl, just dish your avocado chocolate pudding into two serving bowls (or one if you’re like me and keep it all to yourself) and load it up with fresh strawberries, raspberries, blueberries, bananas, or any other fresh fruit you have on hand.
The sky’s the limit. Be creative and have fun!! I like to pour on a little granola and hemp hearts, too. This mostly adds a little texture and crunch – I do like a little controversy here and there.
Now, if you’re looking for a healthy but decadent dessert, you could serve this pudding as is. Simply pour your pudding into four serving dishes and chill until ready to serve.
I hope you enjoy this Chocolate Avocado Pudding Breakfast Bowl as much as I do.
