Vegan Vanilla Wafers

These delicate and delicious wafer cookies are a key ingredient in Banana Pudding.

I recently made a delicious Old-fashioned Southern Banana Pudding for Memorial Day weekend. I had all of the ingredients, except for the quintessential vanilla wafers. I couldn’t find a box that didn’t contain a bunch of junk, including high fructose corn syrup.

So after some disappointing grocery store flops, I decided to make my own. And these tasty little vanilla wafers are the perfect result.

These vanilla wafers are not the same as a commercial vanilla wafer. Obviously. But they taste very good. And the texture is crisp and delicate.

This is a traditional cookie recipe wherein you cream the butter and sugar together, then add in your dry ingredients. Not much different, except there are no eggs so I use a little more baking powder than a traditional cookie recipe. I promise you won’t taste it. I also used cake flour to keep the delicate crumb and whole wheat pastry flour since it contains less gluten protein. You can substitute both flours for an all-purpose flour. Additionally, if you’d like to make a gluten-free vanilla wafer, simply use a gluten-free all purpose flour blend.

Best of all, these vanilla wafers work very well in my banana pudding recipe. And that is what matters most. I hope you enjoy them as much as I do.

Ingredients

  • ¼ cup butter
  • ¼ cup coconut oil
  • ½ cup sugar
  • 1 Tbsp vanilla
  • 1-2 Tbsp plant milk
  • 1 cup whole wheat pastry flour
  • ½ cup cake flour
  • 1 ½ Tbsp baking powder

Instructions

  1. Preheat oven 300 degrees.
  2. In a mixer, cream butter, coconut oil, and sugar.  
  3. Add in vanilla and milk and mix until smooth, about a minute.
  4. Sift together the flours and baking powder. 
  5. Add sifted dry ingredients to the creamed butter-sugar bowl.
  6. Mix on low speed until combined.  
  7. Increase speed to medium low until the mixture forms a dough.
  8. Form into ½ Tbsp balls and place on parchment or baking mat on baking sheet.
  9. Bake for 10 minutes.
  10. Makes about 5 dozen vanilla wafers.

Notes

You can use all butter or all coconut oil. I prefer half and half. 

Please feel free to use commercial vanilla wafers – I can’t find vegan ones that don’t have high fructose corn syrup or other crap in them. So it only seemed logical to make them.
