Easy Chunky Guacamole

A simple yet delicious plant-based dip comprised of fresh avocado, tomato, onion, jalapeno, lime, and cilantro – great with fresh vegetables, tortilla chips, fajitas, tacos, tostadas, burritos, omelets, nachos, seven-layer dip, quesadillas, and more.

Close your eyes for a moment and imagine you’ve been invited to a party. What do you immediately think of taking? You prefer to make something simple, delicious, and healthy. Guacamole and chips, anyone? There are several really good reasons why guacamole is such a huge party favorite.

If there’s one fruit I can’t get enough of, it’s the avocado. It is so incredibly versatile!

But here’s the thing. No matter how many different ways I incorporate avocado, there is one recipe that continues to top the list. Can you guess what it might be? (the title of this post may have given it away…)

If you guessed guacamole, you’re absolutely right. Guacamole is one of those foods that I never get tired of. I go out of my way to find avocados just so I can enjoy a big chunky bowl of guac. As I’m sure you’re well aware, there are numerous ways to make guacamole. Many recipes are simple and plain, such as my super easy Avocado Toast recipe that I enjoy making for breakfast or snack.

But when it comes to dipping a crisp corn tortilla chip, my Easy Chunky Guacamole is where it’s at. It’s loaded with lots of colors and flavors that mingle nicely together to create the perfect balance between crunchy and creamy.

Oh, and since we’re chatting about chips, fresh corn tortillas make the best fresh chips. You can bake them super crunchy without any of the unnecessary oil and salt that most commercial chips contain.

Just like my Salsa Fresca, you get to determine the texture of your Easy Chunky Guacamole. You can dice up the bits very small or keep them rather large. The key is to chop the tomatoes, onions, peppers, and cilantro in a food processor until you achieve the perfect consistency and texture for you. Then you add in the avocado until combined. Super easy, right?

So let’s start talking about the ingredients. This Easy Chunky Guacamole uses a combination of fresh avocados, vibrant purple onions, jalapeño, and tomatoes to provide the most nutrients and the best flavor. But since avocados are the primary ingredient, they’re up first. I love that not only do they lend a gorgeous color and flavor to this Easy Chunky Guacamole, they’re also extremely nutritious.

Just one serving contains 2 grams of plant-powered protein, 7 grams of fiber, and 15 grams of fat. They provide lots of antioxidants, vitamins and minerals, including Vitamins K, C, B5, B6, and E, plus folate, potassium, magnesium, manganese, copper, iron, zinc, and phosphorous. (Healthline)

Tomatoes taste incredible, have a gorgeous red hue, and are so good for you. Tomatoes are primarily comprised of water – a whopping 95% water! They are a great source of vitamins C and K1, potassium, and folate. They also contain lycopene, an antioxidant and carotenoid that reduces risk of heart disease and cancer; beta carotene which our bodies convert into Vitamin A; naringenin which decreases inflammation; and chlorogenic acid, an antioxidant which lowers blood pressure. There are a few interesting facts about lycopene. First, lycopene increases as the tomatoes ripen and is most abundant in the skin of the tomato. Second, it’s what causes the rich red color of ripe tomatoes. (Healthline)

As an example, studies show that there is twice as much lycopene in ketchup than in a fresh tomato. It’s also interesting to know that your body is four times more likely to absorb lycopene when consumed with a source of fat – one really great reason to include tomatoes in this Easy Chunky Guacamole!!

I highly recommend using a food processor to make this flavorful Easy Chunky Guacamole. You have so much more control over the texture and consistency. To start, you can turn it on for a few seconds or pulse it several times, until it resembles your favorite texture and consistency. This is where you must determine if you prefer chunky you want your Easy Chunky Guacamole. 

For instance, if you prefer to have smooth and creamy avocado with a bit of chunky tomato, pepper, and onion, simply remove the chopped tomato-onion mixture. Then blend the avocado until it’s nice and creamy. Then add the tomato-onion mixture back in and pulse once or twice. This will allow you to enjoy a much more smooth guacamole with chunky bits tucked inside.

On the other hand, if you prefer everything a bit chunky but blended, this is the way to go! Take a moment to check out the gorgeous chunks of avocado peeping through in this Easy Chunky Guacamole.

If you don’t have a food processor, you can use a blender on the lowest speed and only for the shortest stint. You can also dice everything up and mix it up by hand.

In addition to the tomatoes, the flavor composition of this Easy Chunky Guacamole comes from fresh purple onion, cilantro, garlic, jalapeño or serrano pepper, lime juice, and a couple of vital spices. Again, you get to decide how much garlic or spice you like.

If you don’t like cilantro, feel free to omit it. Some people think it tastes like soap. And since I know exactly how soap tastes, this is not the taste you want in your Easy Chunky Guacamole. If you’re like me, and you think cilantro is an incredible herb, add it in. Feel free to add as much as you want!

I highly recommend you try this recipe as written, then adjust the seasonings to your taste preference. Add in a little more jalapeño, garlic, lime, or cilantro to suit your fancy. If you want more spice, feel free to add in a touch of cayenne. And of course you can always add in salt and pepper, if you prefer.

  • ¼ cup cilantro, roughly chopped
  • ½ – 1 jalapeño*, seeded and minced*
  • ¼ purple onion, roughly chopped
  • 1-2 limes, juiced
  • 2-3 medium tomatoes, diced
  • 2 cloves garlic, smashed or chopped (or 1 tsp garlic powder)
  • dash of ground cayenne pepper* (optional)
  • hot sauce* (optional)
  • 2 hass avocado or 1 large (Florida) avocado, pitted and peeled
  • ¼ – ½ tsp salt or to taste (optional)

Instructions

  1. In a food processor, pulse the cilantro, jalapeno, onion, lime juice, tomatoes, garlic, cayenne, and hot sauce 5-6 times.  The mixture should have lots of bits similar in size.
  1. Add in the avocado and pulse 3-5 times, until the avocado is fully incorporated, and desired consistency is achieved. If you prefer to keep more chunk, remove the tomato-onion mixture, pulse the avocado, then add in the tomato-onion mixture.
  2. Taste and adjust lime, salt (if using), garlic, cayenne, or hot sauce, as desired. Pulse 1-2 more times, if desired.
  1. Transfer to a serving bowl and garnish with chopped cilantro, if desired.
  2. To store any leftover guacamole, cover with a plastic wrap or in an air-tight container to prevent oxidation, and place in the refrigerator for up to 3 days.

Notes

* If you prefer spicy foods, increase the amount of jalapeno, cayenne, and hot sauce.  Depending on your desired tolerance of spice, use half or all of the jalapeño or serrano pepper. If you prefer your salsa more mild, remove the seeds. If you prefer your salsa spicy, feel free to include some of the seeds or more jalapeño.  Wash your hands well in soap and water; and be very careful to not touch your eyes after handling the peppers.  If you have sensitive skin, consider wearing disposable food-safe gloves.
