A simple and satisfying snack or breakfast treat with mashed avocado and optional tomato on a golden slice of toast.
If ever there were a breakfast or morning snack that I consume more than any other, it is this Easy and Healthy Avocado Toast. The simplicity, the flavor, the colors, the texture, the versatility. There are vibrant green and red hues, creamy avocado on crunchy toast, and it takes less than five minutes from start to enjoying.
All of these makes for the perfect snack – morning, afternoon, or evening.
Plus as the name implies, this Easy and Healthy Avocado Toast is also super nutritious. Your biggest source of nutrients comes from the Avocado and Tomato. Though depending on the bread you opt for, you can gain quite a bit of health benefits from the toast as well.
I like using a sprouted whole grain bread like Knock Your Sprouts Off lower sodium whole grain bread from Aldi, Dave’s Killer Bread, Submarine Rolls, or English muffins. But you can use any whole grain bread, including Rye Bread. Honestly, it depends on what I have in my pantry and my mood. If you follow a gluten-free diet, use a gluten-free bread. Aldi’s G-free bread is delicious.
In a 3.5-ounce serving, avocado contains 160 calories, 2 grams of plant-powered protein, 7 grams of dietary fiber, and 15 grams of heart-healthy fat. It’s rich in Vitamins B5, B6, C, E, and K, Folate, Potassium. Avocado also contains traces of magnesium, manganese, copper, iron, zinc, phosphorous, and Vitamins A, B1, B2, and B3. (Healthline)
Technically speaking, tomato is a fruit. But who actually prepares and eats a tomato as a fruit? If you do, please let me know. I’d be very curious to hear how you enjoy tomato as a fruit. When I try to imagine tomatoes with whipped coconut cream or cake, like strawberries, it just sounds completely wrong.
Instead, tomatoes are so delicious in salads, salsa, chili, marinara, and so on. It’s like they really are a vegetable, they’re just dealing with scientists who can’t accept they’re really not a fruit, no matter what they’re botanic makeup. And that’s okay, as long as you and I know the truth.
Like the avocado, tomatoes are super nutritious. A small 100 gram tomato contains 18 calories, .9 grams of protein, 1.2 grams of fiber, and .2 grams of fat. They are also a great source of vitamin C, potassium, folate, and vitamin K. For these reasons, I usually make mine with the tomatoes. I highly recommend trying it to see if you like it for yourself.
Ultimately, I hope you agree that tomatoes are simply divine on this Easy and Healthy Avocado Toast – unless you are allergic, avoid nightshades, or don’t like tomatoes. Then, you should probably omit the tomato altogether. If none of these issues apply to you, I wholeheartedly recommend trying it with tomato.
You can use any type of tomato you like. You can use slices of large beefsteak tomatoes, garden tomatoes, or roma tomatoes. You can also chop or dice the tomatoes and sprinkle them on top, though it may not be as easy to eat. Somewhat like tacos where some of your fillings keep falling off.
You can place the tomato slice directly on top of the toasted bread, then cover with the mashed avocado or you can spread the mashed avocado on the toast and top with the slice of tomato. It’s a matter of preference.
One interesting thing I’ve learned is that less mashed avocado squirts out when the tomato is underneath the avocado. Don’t believe me? Do an experiment!! Try both ways and let me know what you think!
Another really fun tomato topping option is using grape or cherry tomatoes. Simply slice each grape or cherry tomato in half and place them on top of the mashed avocado. It makes for a striking presentation. And honestly, that is the best part about this Easy and Healthy Avocado Toast. It can be as simple or dressed up as you like.
More than anything, I’ve found the toppings you choose can be a lot of fun. One incredible option is sprinkling some fresh sprouts atop. Not only are they a whole lot of fun, they’re super nutritious. My favorite are broccoli sprouts. They’re mild and packed with nutrients.
And to kick things up a notch, I highly recommend drizzling a little balsamic vinegar over your smashed avocado. These combinations make this Easy and Healthy Avocado Toast extremely satisfying and delicious.

Instructions
