Vegan Chocolatey Chip Belgian Waffles

These are just as good as my Vegan Belgian Waffles but contain cacao and chocolate chips!!  Breakfast just got more tasty!!

Do you like chocolate chips for breakfast?

For Mother’s Day, my husband asked me what I wanted for breakfast. And of course I told him I wanted waffles…. but I didn’t want just any waffles — I wanted CHOCOLATE waffles. And I wanted my chocolate waffles covered with miniature chocolate chips and raspberries.

But since we have never made chocolate waffles before, we had to change things up a bit. We used my Vegan Belgian Waffles recipe as the base and added some cacao powder and mini chocolate chips. And whipped up these incredibly delicious and Chocolatey Chip Belgian waffles.

And I think these waffles turned out perfect. They weren’t too sweet or too indulgent, but boast just enough chocolate to make Mother’s Day very special. Ah, chocolate. How I love thee….

If you like chocolate and waffles, please do give these a try. They’re just as good as the original, but since they’re chocolate, they’re extra special. These waffles may make your Mother’s Day perfect, too. But let’s be real, you can have these Chocolatey Chip Waffles whenever you want

Ingredients

  • 1 Tbsp flax meal
  • 3 Tbsp hot water
  • 2 cups flour (any flour, including gluten-free)
  • 3 Tbsp cornstarch
  • 3 Tbsp cacao powder
  • 1 Tbsp sugar
  • 1 Tbsp baking powder
  • ¼ cup mini chocolate chips (optional but delightful)
  • 2 cups plant milk
  • 1 tsp lemon juice or apple cider vinegar
  • ½ cup apple sauce
  • 2 Tbsp melted vegan butter or neutral oil
  • 1 Tbsp maple syrup
  • 2 tsp vanilla extract

Instructions

  1. Plug in and heat waffle iron.
  2. Combine flax meal and hot water in a bowl. Set aside.
  3. In a separate bowl, combine the dry ingredients. Set aside.
  4. Combine liquid ingredients, including flax-water mixture, until smooth.
  5. Pour liquid mixture into the dry ingredients and stir just until combined.
  6. Allow the waffle batter to rest for at least 5 minutes.
  7. Using a 1 cup measuring cup, scoop about ¾ cup to 1 cup batter and pour on to hot waffle iron.  (Each waffle batter and waffle iron are slightly different.)
  8. Cook according to waffle iron directions, until golden, about 5-6 minutes.*
  9. Place on cooling rack until all waffles are cooked. This recipe makes 5 Belgian waffles.
  10. Serve with maple syrup and raspberries or your favorite toppings. Enjoy!

Notes  

Be sure to clean the waffle iron after each waffle to avoid scorch marks and sticking.

*These waffles were nice and crisp and perfectly baked at the 6 minute mark.

If you’re not serving these right away, you can keep your waffles warm on the lowest setting in your oven for up to 30 minutes.
