Strawberry Mojito (vegan)

A refreshing summer cocktail or mocktail made with a blend of fresh strawberries and limes with a hint of fresh mint and rum. A great way to unwind.

Do you ever crave a cool refreshing drink?

A natural drink full of fresh flavors?

Something fun – with a little pizzazz?

If you’re in the market for a cool and refreshing drink, that is full of flavor, made with natural ingredients, full of fun, with a whole lot of pizzazz, treat yourself to this tasty Strawberry Mojito.

I normally stick with water. It truly is my favorite beverage. But every now and then, I want something fruity. Sometimes I need something fun.

This Strawberry Mojito is my kind of fun drink. It’s perfect for a Friday afternoon after a long work week. It’s the perfect before or after dinner drink with friends. It’s also great for parties and backyard barbecues.

But would you like to know when I enjoy it the most? This Strawberry Mojito is my ideal drink when I’m sitting in my backyard, feeling the cool summer breeze on my skin, and watching the birds at our bird feeder.

This Strawberry Mojito may be simple… but it can be dressed up real fancy. I think this is what I like most about it.

There are two parts to this refreshing beverage -> Strawberry-Lime Syrup and the Strawberry Mojito.

The first is a simple Strawberry-Lime Syrup made with fresh strawberries, limes, and a natural sweetener. To keep things easy, simply blend a quart (16 ounces) of strawberries with half a cup (4 ounces) of freshly squeezed lime juice and half a cup (4 ounces) of your preferred sweetener in a high-speed blender until smooth.

You can use a juicer to make your fresh lime juice or you can use a little hand juicer like me. Either method works – the key is to use fresh lime juice. The bottled variety will probably work as well. I just haven’t tried it and can’t vouch for the end result.

As for the sweetener, I recommend agave syrup or raw organic cane sugar. Both are great in this Strawberry Mojito. You can also use maple syrup or date syrup, though the flavors may vary slightly. You can also try using an alternative sugar substitute like stevia, erythritol, or monk fruit. Please know that I haven’t tried any of these and don’t know how well they will perform or taste.

And since I’m being transparent, I typically pull out one or two smaller strawberries for garnish, mostly because I think strawberries make for a pretty presentation. Plus, I like eating strawberries.

Once the Strawberry-Lime Syrup is blended nice and smooth, transfer it to an air-tight bottle or jar and store it in the refrigerator until you’re ready to enjoy it, up to five days. I normally make a glass of Strawberry Mojito with a portion straightway because it’s absolutely delicious. And then I can still enjoy a glass whenever I want over the next few days with little to no effort.

The next part is making the Strawberry Mojito. It’s super simple and has lots of options!! But I’ll discuss these more in a moment. To make this delicious summer-time drink, pour some ice cubes in a glass along with some fresh mint leaves. If you prefer a stronger mint flavor, mash the mint leaves a bit to release a little more of the mint’s essence.

Next, pour three to four ounces of the Strawberry-Lime Syrup over the mint and ice cubes. If you’re using the rum, now’s the time to splash in an ounce or two, depending on how strong you like your drinks. Now top your glass off with lemon-lime sparkling water, seltzer water, or club soda. Any or all work great in this drink.

Now this is where even more options come in! As indicated, you can make this completely virgin by omitting the rum. Or better yet, you can use a non-alcoholic spirit like Lyre’s White Cane Spirits. Lyre’s non-alcoholic spirits are so much fun to use to make mocktails if you generally avoid drinking alcohol, are pregnant, in recovery, or are a designated driver. It adds great flavor with zero alcohol.

Of course, if you do enjoy spirits, feel free to use a good quality light or white rum. Now that you’ve got a full glass, give it a gentle stir and you’re all set!

Oh, and if by chance you’d like to make this a frozen Strawberry Mojito, simply increase the amount of ice to about two cups, then blend in a high-speed blender until smooth. It should be a light slushy consistency. This is awesome on a super hot evening when you need something refreshing to instantly cool you down.

The rest of your options are how you choose to dress up your Strawberry Mojito! Isn’t she just darling?!

You can garnish your glass with a lime wedge, slice, or twist. You can opt for a strawberry – whole or sliced. You can also dress it up with a sprig of fresh sweet mint leaves. Or, if you’re like me, feel free to use all three. Mostly because it can be a whole lot of fun to get dolled up on the weekend!

Strawberry-Lime Syrup

  • 1 quart strawberries*
  • ½ cup fresh lime juice
  • ½ cup raw sugar, agave, or maple syrup

Strawberry Mojito

  • ½-1 cup cubed ice**
  • 6-8 fresh mint leaves
  • 1 ounce white or light rum*** (optional)
  • 3-4 ounces Strawberry-Lime Syrup
  • 6-8 ounces lemon-lime seltzer water or club soda

Optional garnishes: mint leaves, strawberry, or lime slice/wedge

Instructions

  1. In a high-speed blender, blend the strawberries, lime juice, and sweetener (sugar, agave, or maple syrup) together until smooth.  Adjust lime or sweetener to taste.  If not using immediately, transfer to an air-tight container in the refrigerator for up to 5 days.
  1. To make one Strawberry Mojito, mash mint leaves slightly in a glass. Add ice, Strawberry-Lime Syrup, and rum*** (if using).
  2. Top off with sparkling water, seltzer water, or club soda, then stir gently.** (To make a frozen strawberry mojito, see notes below.)
  3. Garnish with fresh mint leaves, strawberry, or lime slice/wedge (or all three!)

Notes

* You can use fresh or frozen strawberries.

** To make a frozen Strawberry Mojito, increase the ice to 2 cups and blend in a high-speed blender.  Adjust ice or seltzer water to desired thickness. Pour into a glass, garnish, and enjoy!

*** I use Lyre’s White Cane non-alcoholic spirits, purchased on Amazon. It stores well in your pantry – no refrigeration required.
