Peach Crumble for Two

An oil-free whole food plant-based dessert featuring a light and naturally sweetened golden granola over warm peaches. 

Sometimes I want a little dessert. Something light and refreshing. And I’d prefer not to have a large casserole dish to tempt me either. To be clear, I’m not implying that desserts are bad, especially when it’s a healthy plant-based dessert. But honestly, if there’s just me and my husband, we don’t need to make a large dessert.

Besides, sometimes I just want a small dish of something extraordinary. Something that captures my mood. Something a little like this.

This Peach Crumble for Two is all of this and more. It magically captures the essence of both summer and autumn and does a fantastic job balancing between the two seasons. It’s great with cold vanilla ice cream and just as amazing served warm on a chilly night. Honestly, it’s the best of both worlds.

And since this recipe only uses two peaches, it makes about three cups of dessert, perfect for just two or three people. And that’s another incredibly glorious benefit of this dessert – this is a super healthy dessert. You get to enjoy eating a decadent dessert without any adverse and unhealthy side effects. There is absolutely nothing to take away from the delicious and wholesome peaches and oats that comprise this delectable treat.

And I love that this Peach Crumble for Two is healthy enough to eat for breakfast. You can certainly eat it for dessert but you can eat any leftovers with a side of dairy-free vanilla yogurt for a special breakfast treat. After all, it’s simply fruit and a wholesome granola topping sweetened with apple sauce and maple syrup. Think about that for a moment – the whole grain rolled oats are heart-healthy, lower cholesterol, add satiety, and help maintain blood sugar levels. It would make a great yogurt parfait. Perhaps next time…

Ingredients

  • 2 peaches, roughly chopped
  • 2-3 Tbsp coconut sugar
  • ¼ cup applesauce
  • 1 cup rolled oats
  • ¼ cup applesauce
  • 2 Tbsp maple syrup
  • dash of cinnamon

Instructions

  1. Preheat oven to 350°F.
  2. In a small oven-safe dish, combine peaches, coconut sugar, and applesauce.
  1. In a small bowl, combine the oats, applesauce, maple syrup, and cinnamon.
  2. Spoon the oat mixture over the peaches. 
  3. Bake in the oven for 30 minutes, until the granola topping is golden brown.
  4. Allow to cool at least 5 minutes.
  5. Serve with your favorite vanilla ice cream or coconut whipped cream, if desired.

Notes

Feel free to use fresh or frozen peaches.  Either work great in this recipe.  

Since this a healthy dessert (or breakfast), these are larger servings; but you can easily accommodate four dinner guests if you’re serving with nice cream or ice cream.
