Indigo Blueberry Smoothie Bowl

Delicious fiber-filled smoothie bowl packed with berries, bananas, hemp hearts, oats, and blue spirulina, then the bowl is topped with fresh fruit, granola, and nutrient-dense hemp hearts.

I sometimes get a little obsessed with my food.  Commonly, this occurs with creating different variations for sushi, salads, or bowls. Sometimes, it’s a smoothie bowl.

For one thing, the foundation is a simple and nutritious smoothie. But smoothie bowls also taste incredible and can be quite pretty. But perhaps the biggest reason is that smoothie bowls are so much fun to make and eat!

This Indigo Blueberry Smoothie Bowl is one of these fun and delicious creations.  And it’s fairly simple by design.  There are two parts – a thick smoothie and loads of toppings.

The smoothie itself needs to be fairly thick – substantial enough to hold the toppings without sinking down to the bottom of your bowl.  The smoothie foundation consists of coconut water or any unsweetened plant milk, frozen fruit, hemp hearts and rolled oats, and blue spirulina powder.  This last bit is what gives the gorgeous indigo blue hue.

For the frozen fruit, I prefer using frozen banana, any fruit (pineapple, melon, dragonfruit, strawberries, raspberries, blueberries, blackberries), and blueberries.  You can buy a bag of frozen fruit, any frozen berry blends available at your local grocer carries, or you can freeze fresh fruit to make a frozen blend yourself. 

The smoothie also contains nutritious hemp hearts and rolled oats because they are packed full of antioxidants, vitamins, minerals, an omega fatty acids. This means your body will love the nourishment they provide it.  The rolled oats also thicken things up quite a little bit, providing a great deal of fiber and satiety to carry you through the day.

The final smoothie ingredient is blue spirulina powder, which can be purchased in health food stores, Whole Foods, or online via Amazon or the like.  It may be pricier than I’d like, but a little goes a long way and lasts me a while.  It also adds more antioxidants and nutrients, as well as a nice rich dark blue hue. If you can’t find it or don’t want to use it, no problem. It is optional.

Speaking of color, if you add the rainbow, the colors tend to get a bit murky or brown.  That’s what happens when you add all the colors together.  So try to avoid anything yellow-green.  What?

I know, I know.  I’m normally a huge advocate for including all types of fresh greens to smoothies since they are full of antioxidants, vitamins, and minerals.  They’re a great addition in my Shamrock Smoothie Fruit Bowl to maintain a pretty green smoothie base. In this case, we don’t want to add any green to avoid achieving brown.

If you make smoothies a lot, you know how great a high-speed blender or food processor works to get an ultra-smooth texture. A regular blender normally doesn’t possess the necessary horsepower to pulverize the frozen fruit, oats, and hemp hearts. I use a Vitamix, but others have found great success with their high-speed blenders and food processors.

If your blender or food processor can’t handle it, don’t give up. Simply add a little more milk and try again. If you have time, you can also use a combination of fresh fruit and frozen fruit, pour the smoothie into two bowls, and place each on a level surface in the freezer for 30-60 minutes. This will allow the surface of your bowl to firm up enough for your toppings. If that doesn’t work or you’re just not feeling it, pile your toppings on, stir it in to the smoothie, and enjoy!! It’s all good.

Oh, and if you don’t have time to make a smoothie bowl or you want to take your smoothie with you to work or when you travel, no problem. This Indigo Blueberry Smoothie stands well all on its own.  You may need to increase the plant milk to thin things out a little. Otherwise, the smoothie will be a bit thick. Then simply pour it into a large blender bottle or mason jar. And you’ve got yourself a portable smoothie that will kick your high blood pressure to the curb!

Once your smoothie is nice and smooth, pour it into your bowl(s) and top with the toppings.  I like using the same things that went into the smoothie on top of the fruit bowl. So, I usually use fresh berries and/or bananas, some granola, and a sprinkling of hemp hearts and coconut flakes.

And if you’re really creative and have a few extra minutes or need your kids to express their creativity, use cookie cutters to cut your fruit slices into pretty or fun shapes.  Fun and delicious!!

Indigo Blueberry Smoothie Bowl

Smoothie Ingredients

  • 1 cup coconut water or plant milk
  • 1 frozen banana
  • 1 cup frozen fruit (pitaya, berries, mango, pineapple, coconut)
  • 1 cup frozen blueberries
  • 2 Tbsp hemp hearts
  • 2 Tbsp rolled oats
  • 1 tsp blue spirulina powder (optional)

Bowl Ingredients

  • 1 cup fresh fruit (dragon fruit, blueberries)
  • ½ cup granola
  • 1 Tbsp hemp hearts
  • 1 tsp coconut flakes

Instructions

  1. In a high-speed blender, blend all of the smoothie ingredients together until completely smooth, about 1 minute.
  2. Pour smoothie into two bowls.
  3. Top each bowl with half of the sliced banana, fresh fruit, granola, and seeds, as desired.

Notes

* I buy and freeze a bunch of bananas at once.   That way, they’re always available when I want to make nice cream or a smoothie.  On a cutting board, peel and slice and place in a freezer bag or container. Freeze until ready to use, up to 3 months.

** ** You can use any frozen or fresh fruit you like in this smoothie bowl. Just remember if you combine all of the colors of the rainbow, your smoothie may turn more brown.
