Cilantro-Lime Dressing

An incredibly delicious and nutritious dressing made of hemp hearts, fresh cilantro, and lime juice. 

I made this flavorful and colorful Cilantro-Lime Dressing to accompany my Curried Sweet Potato Buddha Bowl, which contains curry-spiced roasted sweet potatoes, garbanzo beans, onion, and kale, and served with sorghum. I like adding a few marinated banana pepper rings, red pepper flakes, and a touch of chopped cilantro, along with this tasty dressing. The end result is a scrumptious balance of nutrition, color, and flavor – perfect for a Buddha bowl!!

This dressing is comprised of equal parts of hemp hearts, plant milk, and fresh cilantro, with a touch of lime juice, maple syrup, garlic, and red pepper flakes. If you haven’t used hemp hearts before, you’re in for a real treat. Hemp hearts lend a mild, nutty flavor and are quite nutritious, comprised of 30% fat and 25% plant protein. They also possess essential fatty acids, Vitamin E, phosphorus, potassium, sodium, magnesium, sulfur, calcium, iron, and zinc. (Healthline) As such, hemp hearts are an ideal thickener in oil-free dressings.

I love the pale green color of this dressing, which is derived from the fresh cilantro. If you prefer a pale off-white dressing, stir in chopped cilantro after blending instead. It will result in a pale off-white dressing with green flecks. I personally think the pastel green color is beautiful and contrasts nicely with the colors of the roasted sweet potatoes and complements the roasted kale.

Ingredients

  • ½ cup plant milk*
  • ½ cup hemp hearts
  • ½ cup fresh cilantro**
  • 2 limes, juiced (2-3 Tbsp lime juice)
  • 2 Tbsp maple syrup
  • 2 cloves of fresh garlic or ½ tsp garlic powder 
  • ¼ tsp crushed red pepper flakes (or cayenne)
  • salt to taste (optional)

Instructions

  1. Add all of the ingredients to a high-speed blender and blend until smooth, about 60-90 seconds.
  2. Drizzle cilantro-lime dressing over top of Buddha bowls or grain bowls.

Notes

* You can use any kind of unsweetened plain plant milk.  I use unsweetened almond milk. 

** If you prefer a pale off-white dressing, stir in chopped cilantro instead of blending it in with the other ingredients.
