Avocado Tomato Salad with Wasabi Dressing

A tasty and nutritious Asian-inspired fruit salad featuring fresh avocado and tomatoes.  Delicious served over fresh greens, in a wrap, pita, or toast.

Yup, I’ve said it. This has got to be the best fruit salad ever!

You’re going to love this Avocado Tomato Salad with Wasabi Dressing. All at once, it’s both light and refreshing, and filling and satisfying. And oh so delicious! This Asian fusion salad the perfect blend of flavor and plant-based goodness.

There are three simple steps:

  1. Make the dressing.
  2. Prepare/cube the avocado and tomato.
  3. Toss it all together and devour!

And that’s all there is to this Avocado Tomato Salad with Wasabi Dressing. It’s really that easy.

Now I’d like to share some helpful notes. The dressing is made by combining some flavorful components together in the bowl that you’re going to use to make your salad. The dressing ingredients include reduced sodium soy sauce, seasoned rice vinegar, wasabi paste, your choice of sweetener, and sesame oil.

I prefer using reduced sodium soy sauce. If you like salty foods, feel free to use the original full strength version.  If you follow a gluten-free diet, please use gluten-free tamari instead.

Wasabi imbues an incredible flavor in this dressing and salad.  If you enjoy sushi and a hint of spice, you’re going to love this.  If you want to add a bit more, feel free. Just keep in mind that some wasabi is more potent and will be spicier, while others may be milder.

Taste and add more, if desired.  If you only have powder, follow the directions to create about one teaspoon worth of paste by combing the powder with a little water.

As for the sweetener, I like using light agave nectar, though you can also use maple syrup or honey. You don’t need much, just a little to counter the acidity of the soy sauce and vinegar. Same goes for the sesame oil. You don’t need much at all. It’s solely included for flavor.

Now that we’ve covered the dressing, it’s time to prepare your fruit. And yeah, it may sound strange, but avocado and tomato are both considered fruit. And that is why I say this has got to be the best fruit salad ever!! Regardless, the ideal avocado to tomato ratio is one to one. In other words, you want the same volume or quantity of cubed tomato and avocado.

To make my Avocado Tomato Salad with Wasabi Dressing, I used one large avocado and two small tomatoes.  If your avocado is somewhat smaller, than you should probably use two avocados.  Likewise, if your tomato is rather large, you may want to use one large tomato. Exact measurements are not important. Use what you have on hand or whatever you prefer.

If you’re like my oldest daughter and don’t like tomatoes, substitute with something you do like or replace it with another avocado. The idea is to enjoy your meal.

And lastly, but optionally, serve this delicious salad with or over fresh greens. Simply take a couple handfuls of mixed greens and toss them together with your Avocado Tomato Salad with Wasabi Dressing. Or just spoon the Avocado Tomato Salad with Wasabi Dressing over the top of a bed of mixed greens. The choice is yours.

Just keep in mind that the greens will begin wilting soon after they get wet. So wait until just before serving if you plan to toss them together. That way, they don’t become too droopy before you can enjoy yours masterpiece.

Also, please keep in mind that avocado begins to oxidize or discolor soon after it is peeled. For this reason, I always plan to consume this Avocado Tomato Salad within an hour of preparing.

Theoretically, the avocado is protected by the vinegar and soy sauce in the Wasabi Dressing if completely covered. It will store well in an air-tight container for up to one day. However, I do not recommend keeping it much more than this.
