Instructions
Preheat the grill (smoker or broiler) over medium heat (about 350° F).
In a small bowl, stir together the cinnamon, coconut sugar, and salt (if using) until combined.
Lightly sprinkle the peach halves with the coconut sugar until evenly coated.
Using tongs, place the peach halves directly on the grill, under an open flame, in a smoker, or in an oven under the broiler until golden (about 3-5 minutes).
Serve the grilled peaches warm on a platter or individual bowls, garnished with fresh mint leaves, roasted walnuts or pecans, maple syrup, or granola. These peaches are also delicious served with non-dairy ice cream, whipped cream, or yogurt.
Notes
* This recipe doesn’t require any oil. However, if your foods tend to stick to your grill or pan, use a nonstick spray or oil first. Also, if roasting in the oven, use a lined baking sheet to avoid sticking. And be careful not to let your peaches stay on the grill or in the oven too long; otherwise, they start to dry out too much or overcook. They should be tender and juicy, not mushy or dry.
