Zesty Cabbage and Corn Slaw

A super fresh and tasty salad featuring cabbage, corn, carrots, and jalapeño. Tossed in a zesty lime dressing.

cabbage or cabbage blend
shredded or chopped

corn
cooked and cooled

shredded carrot

cup
diced purple onion

sliced green onion

jalapeño
seeds removed, minced

chopped cilantro
salt and pepper to taste

Instructions
In a large bowl, combine the lime juice, agave, garlic powder, onion powder, chili powder, and smoked paprika. Stir in the cabbage, corn, carrot, onion, jalapeño, and cilantro until well coated. Store covered in the refrigerator until serving.
Garnish with fresh lime wedges, avocado, vegan feta cheese, and/or chopped cilantro.
Store any leftovers in an air-tight container in the refrigerator for 2-3 days.
Notes
Feel free to toss in some cubed avocado, bell peppers, and/or black beans to make this a meal instead of a side.
