Combine milk, oats, lemon zest, cinnamon in a pot.
Bring to a low boil and reduce heat to low and cover 5-8 minutes, until oats are tender.
Remove from heat.
Stir in sliced bananas, dried fruit, apple sauce, and vanilla.
Serve warm or chilled with additional fruit on top, if desired.
Notes
• I used Caramel flavored almond milk creamer from Aldi. If you don’t use or have access to a flavored almond milk creamer, simply use more almond milk and a touch more vanilla and maple syrup.• I think this is perfectly sweet with the dried fruit, applesauce, and creamer. You can add a little maple syrup when serving if you prefer your porridge sweeter.• Warning!! Keep an eye on your covered pot! If not, it may boil over and make a mess.
