A tasty and nutritious Asian-inspired fruit salad featuring fresh avocado and tomatoes. Delicious served over fresh greens, in a wrap, pita, or sandwich.
In a bowl, combine all of the ingredients together.
Toss with fresh greens, if desired.
Enjoy as is, or serve atop whole grain bread or rice.
Notes
* I prefer using reduced sodium soy sauce. If you like salty foods, feel free to use the original full strength version. If you follow a gluten-free diet, please use gluten-free tamari instead.** Wasabi is an incredible flavor in this dressing and salad. If you enjoy sushi and a hint of spice, you’re going to love this. If you want to add a bit more, feel free. Just keep in mind that some wasabi is more potent and will be spicier, while others may be milder. Taste and add more, if desired. If you only have powder, follow the directions to create about 1 teaspoon worth of paste by combing the powder with water.*** As a general guideline, the ideal avocado to tomato ratio is 1:1. So I used 1 large avocado and 2 small tomatoes. If your avocado is somewhat smaller, than you may want to use 2 avocados. Likewise, if your tomato is rather large, you should use 1 large tomato.
